I had a thought over the weekend, having spent a lot of time over recent weeks searching the net for espresso information etc.
Why is almost all of it American
Virtually every website with info/opinions on espresso brewing, roasting, equipment, modifications is American.
Bearing in mind that espresso started in Italy I find it surprising that apart from TMC there is very little European info on the web.
I realise that I may be seeing more US based stuff as I am only English speaking, and I guess a lot of European and Italin stuff would not be in English.
What I do find amazing is that I see a lot of people suggesting that the Italians do espresso wrong . They invented it
I have seen this particularly in relation to cappuccino, where I have seen a lot of furom posts saying that you MUST use latte style microfoam for it, and the Itailians are wrong to use drier/thicker foam. Surely this just means that what the Americans are making is not cappuccino, but something else. Whenever I try to make a cappuccino with true pourable micrfoam, I end up with a much thinner layer of foam than traditional caps.
I don't have a problem with saying that they like it different, but to say that what has been made for years is wrong is, I think, arrogant.
For the record, my caps are not traditional either, being 6oz, but with a double espresso rather than a single, I'm not sure thechnically what this is called, any ideas?
