OK, so tomorrow got away from me! We have been so busy with Christmas orders that I have not even had time to log in! Anyway here is my fave recipe for Biscotti, the cherry & almond combo is particularly good :)


Recipe for Approx 40 Biscotti

250g Golden Caster Sugar
2 Large Eggs
250g Fine Plain Flour
1tsp Bicarb of Soda
Pinch of salt
115g Whole almonds (in skins)
115g Dried Apricots or Natural Glace Cherries
1 egg yolk with 2tsp milk for glazing
Golden caster sugar for glazing

Preheat oven to 150 degrees centigrade.

Line baking sheet with magic parchment or well greased baking paper.
Whisk up the sugar & eggs to make a very thick creamy mixture.
Sift in the flour, bicarb, salt into the mixture. Mix in the apricots & almonds to form a sticky dough.

Turn out onto a floured surface and shape into 3 sausage shaped pieces about 3inches wide and 5inches long. Put onto the baking sheet spaced well apart. Brush with glaze and sprinkle sugar over. Bake for 30-35 mins until golden brown.

Reduce oven to 130 degrees centigrade.

Cut the baked biscotti into thin slices (about 5mm) and return to baking sheet (if you can resist eating them!). Bake for 20 mins turning once to get crunchy sides.

Put on racks to cool.

Keeps well in a tin for about 2 weeks but rarely last that long.
