Found this sweet table while update the wikipedia entry on coffee cultivars.

oh yeah, the website is kinda half in portuguese.

The few paragraphs below this dendrogram* kinda explain it; that there's a close genetic similarity between types. A genetic interpretation of that History of Coffee diagram you scanned for us all.

Mmmmh, how come Arabica, the first one, is not 100% ?

It's showing the similarities... So it's arabica (typica) "in relation to" bourbon amarelo, for example, and the similarity is 92%.

This table is a little more clear:
