This is a really unusual coffee. No tasting notes/roasting guide so I went into it a bit blind.
I took the initial roast to just before 2C. Very mottled texture to the beans.
In the cup it was very bright, un ripe cherry and quite sweet. Not acidic, dry almost like a young wine. Very light mouthfeel to it. I am leaving it to age for a week to see how it goes.
I did another roast today and took it to the very first pops of 2C.
Still some of the basic characteristics in the cup. The brightness was somewhat muted and gave way to a more rounded berry like aroma, which was more pleasing. No other descriptions apart from these really. I think that due to the brightness of this coffee it would be better suited to the press pot or Aerobie.
