No problem. Just take any bean or mixture of beans and set them aside, if possible in direct sunlight, for a few weeks and voilá! Ill-y Image
Three Francesconi (CMA) espresso machines - Rossi, San Marco, LaCimbali, Faema and 2 Mazzer Major grinders- CoffeeTech Maggionlino, Hottop, Alpenröst and HW Precision roasters.
I decided I needed a bit of a change so I roasted some Monsooned Malabar. That was a change!

From a recent blending post, here is one I did from a recipe that I found that is supposed to give an Illy-like taste profile.

Roast 1 230g Brazilian Canario stopped just before 1st crack
Roast 2 equal parts of Sumatran Iskander Tripplepick, Etheopian Harrar & Guatamalan Hue Hue, taken 20 seconds into 2nd crack.
Profitec 700 dual boiler
Isomac Rituale
Mazzer Mini
Mahlkonig Vario
Chemex
Aeropress
2 Bodum press pots
Hottop updated to a B with Compuetr control
Imex roaster, dimmer mod on heater (under spare bed)
Rival popper, with split motor and dimmer mod on heater (retired)

Apparently Sweet Maria's Liquid Amber Blend is close to an Illy blend, but they won't tell you what beans are in it.

Hmmm... a bit of déjà vu ;)... did you mean 2nd crack, Simon?

Back on topic, I don't think I have experienced a fresh batch of Illy, so have not had the desire to try to imitate it. Please, would someone kindly describe what it is about the blend characteristics (flavour, body, etc) you are trying to duplicate?

We've got some old grinding in beans here. I can't remember what they are, but that doesn't really matter, they are so stale that is all you will taste. They are horribly over-roasted (hence being put aside for grinding). If you have an old Illy can, you are all set :wink: :lol:

Being an Italian I am proud of the fact that espresso runs in the blood.
Thank God its not Illy. When I lived in Milan we used more JBM than Illy.
I love BB comment ( never had a fresh one ) Not many people have.

Would either suggest they've tried "fresh" illy blends... or they are trying to recreate the profile of a stale blend???? Odd to say the least.

I don't think so, as Liquid Amber has lots of aged coffees in there plus robusta, which from what I have heard Illy use neither.

I've only had their Monkey Blend so I can't comment, I was only going on Thom's own description.

Compare to: Very potent espresso blends … Illy has a blend that is somewhat similar but is not domestically available.

Ah, yes forgot thta, but it does say it is not domestically available, and I think it differes greatly in taste to the domestic blend.

I have in a bar in Italy. All the bar was "sponsored" by Illy and the barista was skilled and had won some kind of illy barista championship or training award, I don't remember exactly. The coffee was excellent.
But Illy you buy in shops is stale.
