Storing during outgassing period

All you home roasters - how are you storing your beans during the outgassing period before you drink them?

stainless steel canisters with non-airtight lids

kept at room temperature

easier to wash away stale oil than bags as they go in the dishwasher and come out fresh every time

I leave them in a glass bowl with open lid for half a day max, to degas, and then I close it airtight. Most CO2 is emitted the first hours after roasting.

I leave mine in the colonder for a few hours and then transfer to a bag. I then try to leave them alone for at least a day, however I am so weakwilled ;)

A valved bag is best if you can. Otherwise a jar with the lid on top losely.

After I have removed the worst of the chaff, I put them into the valved bag, but leave the bag unsealed for an hour or so before sealing it up. I always try to push most of the air from the bag before I close the seal on the bags - that way there is as little damaging oxygen in the bag as possible, and it had the additional benefit that I can see more or less how much coffee I have left in each of the bags.

I find that you can reuse the bags 4-5 times, washing them out and drying them carefully between uses.

I shake off as much chaff as I can and then put then in valved bags. I use a different bag for each coffee so there's no cross-contamination.

I always use one-way valve bags. Your beans can degas, but the gas still surrounds the beans in the bag, which is very important in the process. Even if you roast coffee for a longer consumption period, they stay fresh with the Co2 in the bag. After degassing (2-4 days depending of the bean) I put them in a sealed box.

Luminarc glass preserving jars (the type with the spring clips). I get the 1/2 litre size from my local hardware store for £1 something.
