I always use one-way valve bags. Your beans can degas, but the gas still surrounds the beans in the bag, which is very important in the process. Even if you roast coffee for a longer consumption period, they stay fresh with the Co2 in the bag. After degassing (2-4 days depending of the bean) I put them in a sealed box.
