Oven roasting works...here's the proof!

See it is possible....Sumatran taken into 2C, 210 Deg C. Rich earthy spices, mushroom, thick viscous mouthfeel, no acidity....etc.

And some Herbazu I did for Christmas....Just prior to 2C.

I'm impressed, Did you preheat oven before putting the beans in or start the whole cycle with relatively cold oven? Did you leave the beans at rest or moved them around during the cycle??

I do fully pre-heat the oven and never run it from cold. I move them around 3 or four times dependin on the roast. I turn and mix when they are losing their green colour, then at 1C, then just before 2C and then, as with the sumatran, just as 2C is underway. I get a deeper range of flavours than with the Gene, which mainly brought out the high end notes. I seems to get a more rounded flavour and the roasts are not generally too uneven.

Seasons greetings Ned......can you explain in a little more detail the proccess from start to finish for me?
My wife is away next weekend and I would like to have a shot at using my oven. There must be a downside though.
What happens to the chaff......if we use fan assisted ovens is yours easily cleanable?
I gather the Gene is now not being sold by Hasbean so maybe other places will drop it as well. whilst I am delighted with mine its barely a year old.
In fact, I am going to start a new thread on it right now!

Hi Davey

Really simple.

1. I spread 250g or so of green on a baking tray.

2. Pre-heat oven to 210D C

3. Put beans in when it has reached temp.

4. When beans are turning yellow I mix them, ensuring the beans on the outer rim of the trya re moved to the middle and vice versa

Keep an eye on things.

5. At 1 C turn beans as in step 4

6. As beans finish 1 C turn again

At this point DO NOT LEAVE STOVE!

7. Turn again just as 2C starts

Now depending on roast level you can dump anytime you want.

For cooling I take the tray outside. I then agitate the beans with a metal fish slice and blow the chaff away. Once I have gotten rid of most of the chaff I spray a mist of water on the beans to aid rapid cooling. Again I repeat the proces of stirring and blowing and spray until the beans are almost chaff free and cooler.

I do not have too much trouble with chaff in the stove to be honest, but a quck vacuum should sort that out (When cold)

A metal fish slice/spatula is best I have found for this.

Indeed they are one and the same.

I understand the name change was brought about by a traumatic event where-bye our friend fell into his oven while stirring a particularly scrumptious roast of Monsooned Malabar.

Since that time he has not been himself and has become a little whimsical, if not completely barking, but I will not be the one to cast the first stone.

'Tis me Ola :D

The name change was indeed due to me falling into the oven...It happened whilst fighting Cakey with a double ended PF. It is where George Lucas got the idea from ;)

The roasts seem to turn out well anyway, so the Force is obviously strong with young Nuke. I mean Ned.
