my better half being a complete and utter philistine I have to find ways of making coffee that's weak enough ...
just put approx 3 inches of cafetiere coffee in the bottom of a large mug and filled the rest up with steamed milk/foam
would this be a skinny latte on a diet with a bad dose of flu and a severe vitamin c deficiency?

That's all that counts isn't it? Just my opinion, but I think life's too short to drink coffee the way somebody else likes it.
Anyway, she can't be that bad if she puts up with a 2-group in the kitchen?

Sounds like a cuppa joe with steamed milk instead of regular. Wouldn't call it a latte perse - would call it a normal cuppa joe whos in touch with its feminine side

It sounds like a chap my father used to know, who always insisted on drinking the finest rum he could get his hands on. He put a shot in the bottom of a tall glass and filled it up with Coke (as a single-cask whisky lover I keep a bottle of Teachers for dealing with people who put lemonade in it).
Sounds like you need some good quality robusta beans - under that much milk she's unlikely to know the difference. You could even roast it specially for and keep it in a special bag so she knows which is her special coffee
