I know I seem to be endlessly posting new topics - sorry, I'll stop hogging the forum soon!

I am looking for online articles (the more technical the better) to do with ANY aspect of coffee - from roasting to blending to grinding to extraction to machine maintainence/alteration to milk to recipes.

Anything! As long as its good and doesn't mention Kaldi the goatherd!

Try the Sweet Maria's site for lots of interesting stuff, as well as an excellent range of greens of course!

La Spaziale Vivaldi S1 espresso machine. HotTop KN8828P roaster. Chemex manual drip for most brewed coffee plus cafetieres and eSantos.

on the three rosettas - I remember proudly showing a perfect rosetta (wonderfully fanned etc etc) in a 5oz cup to my trainer. He then poured three little rosettas in the same FIVE ounce cup (not the monster on Chris DeFerio's site - though those are lovely rosettas).

Simple lesson - you are never going to know it all, always got to keep pushing to be better...

May i also recommend a book. "the chemistry of coffee" Andrea Illy. It is hard going as you can not get more technical. Im not sure about playing with milk but, but for the coffee it is mind blowing.
