I didn't find the MC2 easy to set up either, and takes far more turns of the dial than I ever expected.
Not sure how you are getting on now, but you could try some pre-ground coffee from a reputable source, just to eliminate some of the grinder/machine variables.
Trying to sort out grinder+machine simultaneously is difficult.
